Dip your (gloved) hand into old-fashioned candy making in Confectionery Crash Course. In this class, you will learn all about the art of sugar boiling. Sugar boiling is the process used to make hard candy, taffy, fudge, and caramel. This is a hands-on class in which you will learn how to make candy from scratch using techniques, modified recipes, and reimagined machinery from the Victorian era. Topics covered will include sugar safety, ingredients required, the effects of temperature and humidity on your process, candy history, candy making equipment, and confectionery as an art form. All students will participate in making at least one batch of candy from start to finish. Everyone will have the opportunity to sample various types of handmade candy, and each student will take home some of the candy we make in class, as well as a couple of recipes to make on their own. Enrollment limited to ten students per day.
